Gluten Free Oatmeal Cookies

Being able to create yummy healthy treats for my family are essential.  Whenever I have a chance to make anything gluten free, I will.  I recently oatmeal cookiesfound a gluten free Coconut Flour that not only smells amazing, but it makes every recipe that it is used in taste great.  If you are a fan of that nutty distinguished taste that coconut brings, than this is the flour for you.

I will caution those that have a nut allergy to be aware that this flour is produced around tree nuts.

I have included the recipe for the oatmeal cookies that my family and friends raved over.  I hope that you will enjoy making them as well as eating them…….

Ingredients:

2 cups of softened butter

1 cup of white sugar

1 cup of packed brown sugar

4 eggs

1 teaspoon vanilla extract

2 cups coconut flour

1 teaspoon baking sodacoconut flour (2)

1 teaspoon salt

1 1/2 teaspoons ground cinnamon

3 cups quick oats

Directions:

In a medium bowl, cream together butter, white sugar, and brown sugar.  Beat in the eggs one at a time, then stir in the vanilla.  Combine the coconut flour, baking soda, salt, and cinnamon; stir into the creamed mixture.  Mix in the oats.  Cover, and chill dough for at least one hour.

 

Preheat oven to 375 degrees F.  Grease cookie sheets or you can line your cookie sheet with a Silpat mat.  Roll the dough into walnut sized balls and press flat into the palms of your hands.  Place the cookies 2 inches apart on the cookie sheet.

 

Bake for 8 to 10 minutes in preheated oven.  Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
