We were off to the races then off to a celebration of a wonderful lady at Proof & Provisions in the Historic Georgian Terrace Hotel.
This subterranean hangout is the perfect spot to get top of the line barrel-aged drinks and small plates created by the Executive Chef Mark Breault. The atmosphere is cozy yet casual with a hip and historic feel.
As we gathered at the farm style table, we were greeted by our server who proceeded to explain in detail what we would be enjoying for our culinary pleasure throughout the evening. Once we sat in our seats, I couldn’t help but notice the Hardwood Smoked Almonds that were in our presence along with the Smoked Jerky. I decided that I would dig into the almonds that were so addictive, I wasn’t sure at that moment if I would need anything else. When the Black Eye Pea Hummus and grilled naan arrived, I would soon change my mind on eating more. Being a lover of vegetarian affair, I was extremely excited to see what else this great place would have in store. The hummus, creamy and delectable was my first experience with Black Eye Peas being used as a spread. Our next item from the menu would be the Next Level Deviled Eggs that were spicy with a hint of sweet. The deviled eggs would be followed by Hot Pretzels that were accompanied with a warm cheese sauce for dipping.
Soon after we would be greeted by the Roasted Cauliflower, and Smoked Chicken Wings. We laughed, drank and ate plenty of amazing light fair. Soon we would be pleasantly surprised by the Executive Chef who would grace us with a new dish from the menu. Red Velvet Belgian Waffles with Fried Chicken, Jalapeno & Citrus Marmalade, arugula, topped with a piece of Hickory Smoked Bacon. Upon prior request, the Chef would grace the vegetarians of the group with the same dish, minus the meat. Once we had a chance to tease our taste buds with this special treat, Chef Melissa was showered with gifts of love. Celebrating her birthday was part of culinary party that we were in attendance for.
Not long after opening gifts, and exchanging kind words back and forth to the Queen of the evening, we were serenaded by a cake that was the chefs special. Filled with decadent fudge, oreo cookies, and chocolate this deliciously moist cake was to die for accompanied by bananas Fosters Ice Cream that is made on premises.
As this amazing night came to a close, I was able to leave knowing that this would definitely be another great restaurant to add to my list of the amazing restaurants that Atlanta has to offer. I would definately recommend Edgar’s Proof & Provisions on a night when you are in the mood for some light entres and a great Old Fashioned……..
