Garlic Risotto with Beefless Tips & Mushroom Gravy

This is a great Vegan recipe to start with if you are transitioning to a Vegan diet or if you would just like to try something that is great tasting as well as good for you.  I have a six-year-old that is not crazy about any food that is brown in color and will tend to tell me that he doesn’t want the “Brown Stuff”.  I was surprisingly able to get him to try this dish with offerings of chocolate chip cookies after he finished, and to my surprise as well as his, he loved it.

Gravyvegan bouillon cubes

1 tablespoon of olive oil

2 cups of vegan broth (made from bouillon)

1/4 cup of AP flour

1 tablespoon of cooking sherry

salt and pepper to taste

Baby Bella Mushrooms thinly sliced about 4


1 cup of Risotto rice

1 teaspoon of buttergardein beefless tips

4 cups of broth (from bouillon cubes)

1 teaspoon of garlic powder

salt and pepper to taste

1 bag of Gardein Beefless Tips


For the Risotto; heat the butter in a heavy saucepan until melted.  Add the Risotto and stir on medium heat for 5 minutes, add the garlic powder.  Begin to slowly add the broth, small amounts at a time continuously stirring.  As the liquid cooks into the rice, continue to add more of the liquid while stirring until you have used all four cups.  The Risotto should be tender and have a smooth and creamy texture.  Add salt and pepper to taste.

For the Gravy; Heat the oil in a small saucepan over medium heat.  Add the AP flour and whisk into the oil until the roux has become dark brown in color (careful not to burn the flour).  Slowly add the broth while whisking until you have a thick gravy. Add the cooking sherry.

Transfer the gravy to a large pan and add the beefless tips.  Turn the heat to a low flame and allow to simmer for about 10 minutes.  Add the sliced baby bellas and allow to heat through.

Serve your beefless tips with mushroom sauce over the Risotto, and enjoy………
