1 cup of Basmati Rice
1/2 up of Brown Lentil
2 Red Onions
1 teaspoon cumin
1 teaspoon cumin seeds
1/2 cup of olive oil
1 teaspoon black peppercorns
salt to taste
Put the lentils into a small saucepan and cover with cold water, bring to a boil, reduce heat and cover. Cook for 20 minutes. Place the olive oil into a large pan and allow to heat up. Add the Cumin seeds and the peppercorns. Cook until the Cumin begins to turn brown. Add the Onions and cook until the onions are a caramel color, put some of the caramelized onions aside for garnish. Add the Lentils and the rice along with 3 cups of water and cover. Cook for an additional 20 minutes until the rice is tender. If there appears to be more water in the pan after cooking for 20 minutes, allow it to cook a little longer until all of the water has completely evaporated. Salt to taste……
Serve in a bowl and garnish with some sprigs of fresh cilantro, reserved onions and a dollop of vegan yogurt………….
