This recipe really surprised me. After reading the Ingredients, I wasn’t sure if this was going to work out or if my family was going to like and enjoy it. As I gathered all of the ingredients together, I realized how easy this was going to be to put together.

Ingredients:
2 carrots cut into large pieces
1 onion cut into large pieces
2 stalks of celery chopped
2 cans of chickpeas
1 can of tomato paste
2 cloves of garlic
2 cups of bread crumbs
1/2 bag of Bocca crumbles
1/4 cup of worcheschire sauce
4 drops of liquid smoke
For the Glaze:
1 cup of brown sugar
1/4 cup of apple cider vinegar
1/4 can tomato paste
Directions:
Gather all of your ingredients and place into a food processor. Pulse until you notice that the ingredients have formed what looks like a paste. Transfer to a mixing bowl and mix in the bread crumbs. Work all of the ingredients in and transfer to a loaf pan. Mold the mixture into a loaf. Preheat oven to 350* and cook for 30 minutes. Once the 30 minutes is up, remove the meatloaf from the oven and brush the glaze onto the loaf and place back into the oven and cook for an additional 20 minutes.
