This recipe is SUPER easy and Vegan. My kids love the colorful peppers as well as the veggies that go into the stuffing. I hope you and your family enjoy this dish as much as we did…….
2 to 3 Bell peppers cut in 1/2
1 zucchini Squash
4 to 5 Baby Bellas sliced
1 cup of Cooked Brown rice seasoned
1/2 cup of Boca Crumbles seasoned
1 carrot thinly sliced
several broccoli florets
1 teaspoon of olive oil
Drizzle some olive oil in a Med sized baking dish. Preheat oven to 350 degrees F
Cut all bell peppers in halves, in a large mixing bowl combine the Boca crumbles and the brown rice, season, and set aside.
Dice the zucchini, slice the baby bellas, and thinly cut the carrots. Begin to fill the peppers with the Boca/rice mixture then add the cut veggies on top. Place the broccoli florets around the peppers and cover with foil. Allow to cook for 15 minutes. Remove the dish from the oven, and remove the foil. Place the dish back into the oven and allow the peppers to cook for an additional 5 minutes. Remove the baking dish from the oven, plate, and enjoy……
